The Gin rickey is a just one version of avariety of cocktails known as Rickey’s; a highball made with a spirit, lime and soda water, without adding any sugar. The original Rickey cocktail was created for Colonel Joe Rickey in the 1880’s when a bartender added a splash of lime to his bourbon and soda. Later, this drink was popularized with Gin as the acidity of lime plays better with the botanicals in the Gin.
