After the harvest, the white grapes are directly pressed. Then, the grape musts are blended with cognac eau-de-vie. This eau-de-vie contains at least 60% alcohol and is aged for at least one year. The oak barrel ageing is the last step before bottling.
The Chevessac white pineau is a blend of young pineaux, at least 2 and a half years old, and older pineaux, up to 6 years old.
The Merlet Chevessac pineaux can be enjoyed fresh as aperitif or digestif.

TASTING NOTES

Nose: the very complex nose reveals lime-tree leaves, vine flowers, and above all yellow flesh fruits notes.

Mouth: peach and quince jelly flavours mixed with hints of vanilla and honey.
