After the harvest, the red grapes macerate for several hours. Then, the grape musts are blended with cognac eau-de-vie. This eau-de-vie contains at least 60% alcohol and is aged for at least one year. The oak barrel ageing is the last step before bottling.
The Chevessac red pineau is a blend of young pineaux, at least 2 and a half years old, and older pineaux, up to 6 years old.
The Merlet Chevessac pineaux can be enjoyed fresh as an aperitif or digestif.

TASTING NOTES

Nose: very powerful red berries notes as raspberry and dark cherry.

Mouth: the attack is supple but generous. The typical red berries flavours notably stand out, backed by spices hints. Excellent aromatic length.
