SÉLECTION SAINT SAUVANT is a series of cognacs produced in small batches, with only a
few thousand bottles for each edition. For each of them, Gilles and his sons Pierre and
Luc select in the family cellars eaux-de-vie at their best maturity, all aged for more than ten years, often even well beyond.
Assemblage n°3 is composed exclusively of cognacs aged over 14 years from the Cognac area
sub-regions: Petite Champagne (58.6%), Fins Bois (19.7%) and Grande Champagne (5.2%).
It has been blended in 2022 and bottled in 2023.

Nose: The nose is dominated by notes of dried fruits (walnuts and prunes) and a fine woody touch.
Mouth: The mouth is warm and explosive. We find woody and vanilla notes. The finish is persistent with notes of freshly roasted coffee and prunes.
