After the harvest, the white grapes are directly pressed. Then, the grape musts are blended with cognac eau-de-vie. This eau-de-vie contains at least 60% alcohol and is aged for at least one year. The oak barrel ageing is the last step before bottling.
The Extra Old Chevessac pineau is aged in oak barrels during at least ten years. The long ageing of this pineau allows to refine the white grapes aromas and to get a unique flavour harmony.
