GINSQUIL

Created by Manuel Montepeque at the Chichimeco bar in Guatemala City.

 

One of our first cocktail in our Bar Journey. Using the “Güisquil” (Chayota), an underrated ingredient in the world, but in Guatemala we use it in diverse ways in gastronomy, and now in the liquid world. A riff on the Gimlet. As the Güisquil is an terroir ingredient, we use the sweetness that this ingredient has by making it into a milk punch cocktail. 

RECIPE

Servings
INGREDIENT AMOUNT
Guisquil syrup 20.0 ML
Lime Juice 20.0 ML
Lavender Tincture 2.0 ML
Milk 25.0 ML
Xibal - Xibal 58.0 ML

STEPS

Add all ingredients to a batch. Let the milk curdle and strain out the solids. Keep refrigerated and pour at as needed.
